Vegan Latin American

When Calafia (Bay-Area almond milk maker) asked me to teach the Latin American class “vegan,” I was surprised at first. But the end result was delicious and here are some of the pictures…

Above is our meal featuring Classic Cuban Ropa Vieja made with plant-based beef, snuggled between Easiest Black Beans, Coconut Rice and sliced Hearts of Palm. Our sauces include an Argentinian Chimichurri and a Peruvian Aji Sauce (made from yellow Aji peppers)

These desserts balls are my take on Brazil’s famous Brigadeiro balls made from sweetened condensed milk. We removed the added sugar and replace the milk with almond butter for Laura Keto Balls, a yummy snack that tastes better than the originals, with a lot less sugar.
