Palo Alto Medical Foundation celebrated National Nutrition Month with a weekly presentation of cookbook and food authors.
Cool Cuisine, Taking the Bite Out of Global Warming and myself teamed up with Dalia Perelman, RD, CDE, part of the PAMF staff, for a food and nutrition discussion about the ideas in the book.
We started with a short presentation by both speakers.
Then I cooked and chatted about the culinary issue and aspects of the dish, while Dalia commented on the nutritional values of the foods. Scientists (dietitians) give you what you need, chefs give you what you want. A perfect match!
We made Roasted Candied Carrots, Greens with Ume & Wasabi, Hato Mugi & Brown Rice with Veggie Miso Condiment & Gomasio, and Sesame Cashew Date Bars. Everyone got a taste.
Dr. Barb Erny showed up to help plate.
Her favorite? As always – the sweets! Sesame Date Bars, a recipe in Cool Cuisine – Taking the Bite Out of Global Warming, is sweetened only with dates and orange juice. A great snack!
